Oh for crying in the mud. For the
last time, I am *not* preg– oh, what's the use? You people won't
believe me anyways. Please send all baby shower presents in the
form of Walmart gift cards.
Despite my phenominally ugly mood this week, I must tell you that today
held an exceptional bright spot when I went to the grocery store and
was able to load up on a plethora of curry. While Michigan has my
contempt on account of its ridiculous compulsion to yeild itself to snow, I
do give it points for carrying an abundance of curry in its stores
(even tho they did not have medium or hot — mild still works nicely).

Love Curry?
Hi love your blogs! I live in Thailand where I COULD eat curry everyday, but I had to taper. It will put on the pounds if you use coconut milk like we do. The Japanese version uses water.
The one you are showing on your site looks like it may be Japanese variety.
Do you like Thai Curry? If so, you can make your own curry paste and then add to your chicken or whatever and have curry when ever you want. We have three main types of curry. Green, Red and Yellow.
Here is a recipe for the yellow curry paste
makes about 1 cup but you only need 1Tbls. to make 2 cups of curry
1 teaspoon cumin seeds
1Tablespoon Coriander seeds
3 white peppercorns or 1 t. ground white pepper
1/4 cup small dried red chilies, split and seeded
4 cloves garlic
4 shallots
1T. ground tumeric
1 T. galanga
1/4 cup minced lemon grass
1t. fresh lime zest
1t. shrimp paste (optional)
1 t. salt or fish sauce
1T. oil
toast the seeds over fire in a wok for 2 to 4 min. remove. roast peppercorns in the same manner. remove. toast the chilies till dark spots appear but do not blacken Remove. roast garlic (sliced) and shallots(sliced) one at a time in the same manner. remove combine all into food processor and blend till smooth. to store: divide into 2 T. portions in plastic bags and freeze. paste keeps up to 3 mo.
to make the curry from the paste:
1 T. oil
1 minced shallot
1 clove garlic minced
1 T. curry paste
1 cup coconut milk
1 cup chicken stock or water
2 T. fish sauce
2 T. sugar
pinch of ground turmeric
Heat oil in saucepan, stir fry meat a bit in the oil add the shallots, garlic, and curry paste allow to sizzle for 15 seconds. Stir in 3 T. of coconut milk. allow to bubble for one minute. add the remaining milk, stock and season. stir and let simmer for 5 min. If you add potatoes and carrots you can just add the stock and season and then add the remaining milk in at the end when the veggies are tender. you can use tofu for the meat or veggies like eggplant, onion, green beans etc…
